  • 1 cup Keto Marinara Sauce
  • 1 1/2 cups ricotta cheese
  • 1/2 pound Italian sausage (ground)
  • 1/2 cup mozzarella cheese (shredded)
  • 1/2 cup parmesan cheese (grated)
  • 1 whole egg
  • Fresh herbs: basil and parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Thinly slice zucchini and sprinkle with salt; let sit for 20 minutes.
  3. Pat zucchini dry and bake on a wire rack for 10 minutes.
  4. Brown Italian sausage in a skillet until cooked; allow to cool.
  5. In a bowl, mix sausage with ricotta, parmesan, egg, herbs, garlic powder, salt, and pepper.
  6. Spread filling onto each zucchini slice and roll tightly.
  7. Layer marinara sauce in a casserole dish; place rolls seam-side down.
