  • 45 zucchinis (sliced)
  • Olive oil (for drizzling)
  • 1 cup (240g) fresh vegan ricotta
  • 1 lb (500g) fresh spinach, chopped and cooked
  • basil leaves (chopped or to taste)
  • 1 tbsp Italian seasoning
  • 1 cup (240ml) marinara sauce
  • vegan mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice zucchinis lengthwise into thin strips; drizzle with olive oil.
  3. In a bowl, mix fresh vegan ricotta, cooked spinach, chopped basil, Italian seasoning, and salt until combined.
  4. Take a zucchini slice, place filling at one end, and roll tightly.
  5. Spread marinara sauce in a baking dish; place rolled zucchinis seam-side down. Top with more marinara and vegan mozzarella.
  6. Bake for about 40 minutes until bubbly and golden.
