  • 16 oz cream cheese
  • 1 vanilla bean
  • 2 large eggs
  • 1/2 cup granulated sugar (plus extra for the topping)
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons granulated sugar (for crust)
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter; press into the bottom of each liner.
