  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots of espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar for topping
  • 1/4 tsp salt for topping
  • 1/2 tsp vanilla extract for topping
  • 2 tbsp espresso powder for topping
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and butter together in intervals.
  3. Mix in both sugars until fully combined.
  4. Incorporate the eggs one at a time, whisking well after each addition.
  5. Sift the flour and salt into the mixture, folding gently until just combined.
  6. Pour the batter into the prepared tin and bake for 25–30 minutes until set but fudgy.
  7. After baking, poke holes in the brownies and pour espresso over them while warm; let cool.
  8. For the topping, beat mascarpone, heavy cream, sugar, salt, vanilla extract, and espresso powder until smooth; spread over cooled brownies.
  9. Dust with cocoa powder before serving.
