  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon dried parsley
  • 1/4 cup freshly grated Parmesan cheese (plus more for topping)
  • 1 cup vegetable oil (for frying)
  • 1/2 cup shredded Fontina cheese
  • 1/2 cup shredded fresh mozzarella cheese
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven's broiler.
  2. Slice zucchini lengthwise into 1/2 inch thick pieces.
  3. Set up dredging stations with flour, beaten egg, and a mixture of panko breadcrumbs, parsley, and Parmesan.
  4. Heat oil in a nonstick skillet over medium-low heat.
  5. Dredge each zucchini slice in flour, then dip in egg, followed by breadcrumb mixture.
  6. Fry the slices in batches until golden brown; transfer to a baking sheet lined with foil.
  7. Top each slice with Fontina and mozzarella cheese.
  8. Broil until the cheese melts; drizzle marinara sauce over the top and add additional cheese if desired.
  9. Broil again until everything is bubbly and golden.
