  • 2 large ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1 cup cooked quinoa
  • 1/3 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 1/3 cup sliced almonds (lightly toasted)
  • Dressing: extra virgin olive oil
  • lemon juice
  • honey (or maple syrup)
  • garlic
  • Dijon mustard
  • salt
  • pepper

Instructions

  1. In a large bowl, massage chopped kale with olive oil and salt for 2-3 minutes until tender.
  2. Whisk together dressing ingredients in a small bowl or jar.
  3. Add cooked quinoa to the kale and mix with half of the dressing.
