  • 2 medium zucchini
  • 1 ½ cups pre-cooked chicken (cut into cubes or shredded)
  • ¾ cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ medium onion (finely diced)
  • 3 tablespoons olive oil
  • 7 cherry tomatoes (cut in half)
  • Garlic powder, oregano, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9 x 13 baking dish.
  2. Trim zucchini ends, slice in half lengthwise, and scoop out the flesh.
  3. Bake zucchini halves cut-side up for about 15 minutes until slightly softened.
  4. Sauté onions in olive oil; add chicken, tomatoes, reserved zucchini flesh, garlic powder, and oregano. Cook for 2 minutes.
  5. Stir in heavy cream and parmesan; simmer until thickened.
  6. Stuff the zucchini with the filling and bake for another 10 minutes until cheese is melted.
