  • 800g strawberry purée
  • 760g sugar
  • 20g pectin
  • 10g tartaric acid
  • 2 tsp Tabasco
  • 50g caster sugar

Instructions

  1. In a large pan, combine strawberry purée and 720g of sugar. Bring to a boil over medium heat.
  2. In a mixing bowl, mix pectin with 40g sugar. Once the strawberry mixture boils, add the pectin mixture.
  3. Heat until reaching 104ºC. Remove from heat and stir in tartaric acid and Tabasco.
  4. Line a baking tray with cling film or nonstick spray and pour in the jelly mixture. Refrigerate for at least 4 hours to set.
  5. Cut into 2cm squares and roll each square in caster sugar before serving.
