  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 2 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup 35% cream (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. Combine chopped dates and baking soda in a bowl; pour scalded milk over them and let cool for 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. Beat eggs until frothy.
  4. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until smooth; gradually mix in dry ingredients followed by soaked dates with their liquid.
  5. Pour batter into the prepared dish; bake for 30 minutes until golden.
  6. For the caramel sauce, melt butter in a saucepan; stir in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  7. Once baked, poke holes in the pudding and pour caramel sauce over it to soak.
  8. Let rest for 15 minutes before serving with more caramel sauce and whipped cream.
