  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes

Instructions

  1. Preheat oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes under cold water and set aside to dry.
  4. In a bowl, mix water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife and place them in the lemon water.
  5. Combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper in a bowl.
  6. Drain the carved potatoes and toss them in the seasoning oil until well coated.
  7. Place seasoned potatoes on the baking sheet face side up and bake for about 30 minutes until golden brown and tender.
