  • 1 tablespoon salt
  • 2 cups apple cider vinegar
  • 2 cups water
  • 1/4 cup sugar (optional)
  • 1/2 cup sliced sweet onion
  • 1 tablespoon dried dill (or 3 tablespoons fresh)
  • 2 cloves garlic (minced)
  • 1 jalapeño (sliced; adjust for desired heat)
  • 1/2 teaspoon crushed red pepper (optional)

Instructions

  1. In a colander, toss okra with salt and let sit for one hour to draw out moisture. Rinse thoroughly and dry with a towel.
  2. In a small saucepan, combine vinegar, water, sugar (if using), onion, dill, garlic, and jalapeño. Heat until boiling and then simmer for a couple of minutes.
  3. Pack the okra into mason jars and pour the hot brine over them.
  4. Loosely cap the jars and allow them to cool before sealing tightly. Refrigerate for at least 24 hours before enjoying.
