  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g peeled, cored, and diced apples
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter, at room temperature
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter, at room temperature
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. Warm the milk until lukewarm. In a mixing bowl, combine milk, granulated sugar, and yeast; let sit for 5 minutes until frothy. Add eggs and salt; mix well.
  2. Gradually incorporate flour and softened butter until combined. Knead on a floured surface for about 5 minutes until smooth, then place in a greased bowl to rise for approximately 1 hour or until doubled in size.
  3. For the filling, melt butter in a pan over medium heat, then add diced apples, sugar, cinnamon, salt, and corn starch; cook until apples soften. Stir in pecans.
  4. Roll out the risen dough into a rectangle. Spread with softened butter, sprinkle with brown sugar mixture and apple filling; roll tightly into a log shape and slice into equal pieces.
  5. Bake at 180°C (350°F) on a parchment-lined baking sheet for 25–30 minutes until golden brown.
  6. While baking, prepare frosting by beating together softened butter and cream cheese; gradually add powdered sugar and heavy cream until creamy.
  7. Drizzle frosting over warm rolls once they’ve cooled slightly.
