Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices; season with salt and pepper. Cook for 3-4 minutes until tender, then remove from skillet.
  3. In the same skillet, add remaining butter and onions; cook for 2 minutes until softened.
  4. Stir in mushrooms; cook for 5-7 minutes until browned.
  5. Add garlic and herbs; cook until fragrant (about 20 seconds).
  6. Return zucchini to the skillet; mix with mushrooms and heat through.
  7. Pour in vegetable broth; simmer for an additional 2 minutes.
  8. Adjust seasoning as needed; garnish with chopped parsley before serving.
