  • 1 medium head of cauliflower
  • 1/2 cup Kalamata olives
  • 1/4 cup green olives
  • 2 tablespoons capers
  • 1 small red onion
  • 1 cup cherry tomatoes
  • Fresh parsley (optional)
  • Fresh basil (optional)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper

Instructions

  1. Blanch cauliflower in boiling salted water for 2-3 minutes until slightly tender. Drain and rinse under cold water.
  2. In a bowl or jar, whisk together olive oil, vinegar, lemon juice, mustard, oregano, salt, and pepper.
  3. In a large bowl, combine blanched cauliflower with olives, capers, red onion, cherry tomatoes, parsley, and basil.
  4. Toss everything with the dressing and let it sit for 10-15 minutes to meld flavors.
  5. Serve chilled or at room temperature.
