  • 3 cups cooked sushi rice (short grain)
  • 1 lb sushi-grade salmon
  • 4 tbsp Kewpie mayo
  • 2 tbsp Sriracha
  • 2 tbsp scallions
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tsp soy sauce
  • 2 tsp sesame oil
  • Sliced avocado
  • Jalapeno (thinly sliced)
  • Black and white sesame seeds (toasted)

Instructions

  1. In a small mixing bowl, combine rice vinegar, sugar, and salt; stir until dissolved.
  2. Mix this seasoning into the cooked sushi rice until well combined.
  3. Transfer seasoned rice to a baking pan lined with plastic wrap and press down evenly.
  4. Cover and chill in the fridge for at least 4 hours or overnight.
  5. Once chilled, heat oil in a frying pan over medium heat. Cut the rice into squares and fry until golden brown on each side.
  6. Top crispy rice squares with sliced salmon, drizzle with Kewpie mayo and Sriracha, and garnish with scallions.
