  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 g all-purpose flour

  • 3 teaspoons pumpkin spice
  • 100 g powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup (for glaze)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a 20-22 cm springform pan.
  2. In a mixing bowl, beat the eggs and sugar until frothy. Add in the coconut oil, pumpkin puree, and vanilla extract; mix well.
  3. In another bowl, sift together the flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined; avoid overmixing.
