  • 4 mini pumpkins (or ramekins)
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Place your ramekins or hollowed mini pumpkins in a baking dish; fill with hot water halfway up the sides.
  3. In a mixing bowl, whisk together heavy cream, granulated sugar, egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until smooth.
  4. Pour the mixture into your ramekins or mini pumpkins until three-quarters full.
  5. Bake for approximately 30 minutes or until set but slightly jiggly in the center.
  6. Allow to cool to room temperature before chilling in the refrigerator for at least two hours.
  7. Once chilled, sprinkle sugar on top and caramelize with a kitchen torch or under a broiler.
