  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil or butter
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt, pepper, garlic powder, to taste
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed potatoes in olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  2. Season the fish fillet with salt, pepper, garlic powder, and paprika. In a non-stick skillet over medium-high heat, cook the fish for about 3-4 minutes per side until opaque and flaky.
  3. For the guacamole, mash the avocado in a mixing bowl. Stir in chopped tomato and onion along with lime juice and salt until slightly chunky.
  4. Serve the pan-seared fish with roasted potatoes on a plate alongside a generous scoop of guacamole.
