  • avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil eggs for 7-8 minutes until desired doneness; cool in ice water, peel, and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes; toss gently.
  3. Top the salad base with sliced grilled chicken breast, avocado slices, quartered boiled eggs, crumbled feta cheese, and Kalamata olives.
  4. Drizzle extra virgin olive oil and apple vinegar or lemon juice over the salad; season with salt and black pepper to taste. Serve immediately for maximum freshness.
