  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked couscous
  • 1 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. In a large bowl, mix the chicken with olive oil, oregano, garlic powder, salt, and pepper. Ensure chicken is well coated.
  2. Preheat your grill or grill pan over medium heat. Grill the marinated chicken for about 5-7 minutes per side until fully cooked. Allow to rest before slicing.
  3. For the cilantro yogurt sauce, combine Greek yogurt, cilantro, lemon juice, garlic, salt, and pepper in a small bowl; mix until smooth.
  4. To assemble the bowls, divide couscous between two bowls and top with sliced grilled chicken, cucumber, red onion, olives, and feta cheese. Drizzle with cilantro yogurt sauce before serving.
