  • 1 ½ cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 4 tbsp butter (melted)
  • 32 oz cream cheese (softened)
  • 1 cup white granulated sugar
  • 3 large eggs (room temperature)
  • 1/2 cup heavy whipping cream
  • 1/2 cup sour cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 ½ tsp lemon extract
  • Zest of 3 lemons

Instructions

  1. Preheat your oven to 325°F (163°C) and wrap the outside of a springform pan with aluminum foil.
  2. Combine graham cracker crumbs, brown sugar, and melted butter in a bowl; press into the bottom of the prepared pan.
  3. In a separate bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Mix in heavy whipping cream, sour cream, cornstarch, vanilla extract, and lemon extracts along with lemon zest.
  5. Pour the filling over the crust and bake for about 85 minutes until set but slightly jiggly.
  6. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours.
