  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter (very cold)
  • 69 tablespoons ice water
  • 2 large honey crisp apples (peeled and diced)
  • 18 oz fresh blackberries
  • 3 tablespoons salted butter (for filling)
  • 2 tablespoons fruit juice (as a substitute for alcohol)
  • 1 teaspoon vanilla bean paste

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt in a stand mixer. Add cold butter until it resembles coarse sand. Slowly add ice water until dough forms.
  2. Chill the dough for at least one hour.
  3. For the apple filling, sauté diced apples in butter until golden, then add fruit juice, vanilla, cinnamon, and brown sugar until thickened.
  4. For the blackberry filling, roast blackberries on a baking sheet and simmer with sugar and vanilla until thick.
  5. Roll out chilled dough and cut into pumpkin shapes using a cookie cutter; refrigerate cutouts.
  6. Assemble by placing filling on half of the cutouts, topping with another cutout, sealing edges with a fork, and brushing with egg wash.
  7. Bake at 375°F for about 25 minutes until golden.
