  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour

  • 3 cups old-fashioned rolled oats
  • For the icing: 2 cups powdered sugar, 3-4 tablespoons milk, and 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, beat together softened butter, light brown sugar, and granulated sugar until creamy. Add eggs one at a time along with vanilla extract.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to wet ingredients until just combined. Fold in oats.
  4. Spread batter evenly into the prepared pan and bake for 25–30 minutes until golden brown.
  5. For the icing, mix powdered sugar with milk and vanilla until smooth. Once bars cool, drizzle or spread icing over the top.
