Ingredients

Scale
  • 6 cups chicken broth
  • 2 celery ribs
  • 1/2 medium onion
  • 1 lb boneless skinless chicken breasts
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 1/4 tsp salt
  • 1 cup plus 2 tbsp milk

Instructions

  1. In a large pot or Dutch oven, combine chicken broth, celery, onion, and chicken breasts. Bring to a boil, then reduce heat and simmer partially covered for about 15 minutes until the chicken is cooked through.
  2. While the chicken cooks, prepare the dumpling dough by whisking together flour, baking powder, and salt in a mixing bowl. Stir in milk until a shaggy dough forms.
  3. Roll out the dough on a floured surface to about 1/4-inch thickness and cut into strips or squares.
  4. Once the chicken is done, remove it from the broth and discard celery and onion pieces. Drop dumpling pieces into simmering broth while stirring gently.
  5. Simmer for 20-30 minutes until dumplings are cooked through and broth thickens slightly.
  6. Shred or chop the cooked chicken into bite-sized pieces and return it to the pot. Season with salt and pepper to taste before serving warm.
