  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence. Whisk until smooth.
  3. In another bowl, mix together the whole wheat flour, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Spoon the batter into a lined muffin tin, filling each cup about two-thirds full.
  6. Bake for approximately 18 minutes or until a toothpick comes out clean when inserted into the center.
