  • 175 g Baking spread (or unsalted butter), softened
  • 175 g Caster sugar
  • 3 large Eggs
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter, softened
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with black cases.
  2. Cream together softened baking spread and caster sugar until fluffy. Beat in eggs one at a time with vanilla extract.
  3. Fold in self-raising flour and black food coloring until combined.
  4. Divide batter into cupcake cases and bake for 25-30 minutes. Cool completely on wire racks.
  5. Core cooled cupcakes and fill with green-tinted custard.
  6. For the buttercream, beat softened butter with icing sugar; add milk and food colorings to reach desired consistency.
  7. Pipe or spread buttercream on each cupcake, finishing with candy eyes.
