  • 1 small onion
  • 2 garlic cloves
  • 1 pound lean ground beef
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 28 oz canned diced tomatoes
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice zucchini into rounds, salt them, and let sit in a colander for 15 minutes to draw out moisture. Rinse and pat dry.
  3. Heat olive oil in a skillet over medium-high heat. Sauté onions for 2 minutes; add garlic and ground beef, cooking until browned.
  4. Stir in drained tomatoes, Italian seasoning, salt, and pepper until combined.
  5. In an 8×8 baking dish, layer half of the beef mixture, followed by half of the zucchini and half of the cheese. Repeat layers.
  6. Bake for 20-25 minutes until the cheese is melted and lightly browned. Let rest for 10 minutes before serving.
