Ingredients

Scale
  • 1 cup elbow macaroni
  • 1 cup milk
  • 1/2 cup grated cheddar cheese
  • 1/4 cup butter
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package directions. Drain it well and set aside.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute until bubbly. Gradually add milk while stirring constantly until thickened. Stir in cheese along with salt and pepper until melted and smooth.
  3. Stir cooked macaroni into your cheese sauce until evenly coated. Let the mixture cool slightly before shaping it into small balls using either your hands or a spoon.
  4. Prepare your breading station by dipping each mac and cheese ball first into the beaten egg mixture, then coating it in flour.
  5. In a deep skillet or pot, heat about 1 inch of vegetable oil to 350°F (175°C). Fry the mac and cheese balls in batches for about 2-3 minutes per side until they are golden brown and crispy. Drain them on paper towels after frying.
  6. In another saucepan, combine diced tomatoes, tomato paste, minced garlic, oregano, red pepper flakes (if using), salt, and pepper. Simmer this mixture for 5-7 minutes until slightly thickened.
  7. Enjoy your fried mac and cheese balls hot with the creamy tomato sauce for dipping!
