  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut the chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, whisk together canola oil, lime zest and juice, chili powder, cumin, garlic, jalapeno, and salt.
  3. Pour the marinade over the chicken in the bag. Seal tightly and refrigerate for at least 30 minutes or overnight for best flavor.
  4. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes.
  5. Cut the bell peppers and onion into 3/4-inch chunks.
  6. Thread marinated chicken pieces onto skewers alternating with vegetable chunks.
  7. Lightly oil the grill grates and cook kebabs for about 6 to 8 minutes, turning occasionally until chicken is fully cooked.
  8. Serve warm with fresh cilantro and additional lime juice.
