  • 8 oz dry rotini pasta
  • 9 oz hard salami, chopped
  • 6.5 oz pepperoni, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • 8 oz mozzarella pearls
  • ½ cup pepperoncini, sliced
  • 1/3 cup fresh basil, sliced
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and cool completely.
  2. In a small bowl, whisk together olive oil and red apple vinegar with minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper to create the vinaigrette.
  3. Prepare the salad ingredients by chopping the salami and pepperoni into bite-sized pieces and slicing the cherry tomatoes, olives, red onion, and basil.
  4. In a large mixing bowl, combine cooled pasta with prepared ingredients. Pour vinaigrette over salad and toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
