  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, combine eggs, melted butter, canola oil, brown sugar, and vanilla extract; mix until smooth.
  4. Stir dry ingredients into wet mixture until just combined. Gently fold in shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow to cool for about 15 minutes in the pan before transferring to a wire rack to cool completely.
