  • 12 oz spaghetti
  • 4 tablespoons butter
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 small tomatoes, diced
  • 1 tablespoon flour
  • 1 cup heavy cream
  • 1 cup white grape juice
  • ½ cup shredded Parmesan
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. Prep the chicken by cutting thick breasts horizontally and patting dry. Coat in flour mixed with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden brown and cooked through. Set aside.
  3. In the same skillet, melt butter and sauté chopped onion and minced garlic for about 2 minutes. Add diced tomatoes and flour; stir to combine.
  4. Pour in heavy cream and white grape juice along with Italian seasoning, salt, and crushed red pepper flakes. Let simmer for 5–7 minutes until slightly thickened.
  5. Cook spaghetti in salted boiling water until al dente; drain well.
  6. Toss cooked spaghetti into the sauce until well-coated. Top with sliced chicken and heat through for an additional 5 minutes before serving.
