  • 2 tablespoons butter
  • 1 large sweet onion, peeled and chopped
  • 34 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans, drained
  • 7 ounces chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese, cut into cubes

Instructions

  1. In a large pot over medium heat, melt butter and sauté chopped onion until translucent. Add minced garlic and sauté until fragrant.
  2. Stir in ground cumin and dried oregano.
  3. Add boneless chicken breasts and half of the chicken broth; cover and simmer for 15 minutes until cooked through.
  4. Shred the chicken using two forks and return it to the pot.
  5. Mix in drained cannellini beans, chopped green chiles, frozen corn, remaining chicken broth, and cream cheese cubes; stir until well combined.
  6. Allow to simmer on low heat for 10 minutes until heated through and creamy.
  7. Serve garnished with cilantro, lime wedges, or tortilla chips as desired.
