  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat your oven to 425°F.
  2. Generously butter a baking dish.
  3. Sprinkle salt on the sliced zucchini and let sit for 15 minutes to draw out moisture. Pat dry with paper towels.
  4. Arrange the zucchini slices in the baking dish.
  5. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  6. Melt butter in a saucepan over medium heat; add minced garlic and sauté briefly until fragrant.
  7. Combine the cream mixture with the garlic in the saucepan, whisking continuously until bubbling.
  8. Stir in half of the mozzarella cheese until melted.
  9. Pour the creamy mixture over the zucchini and sprinkle with remaining cheeses.
  10. Bake for 18 to 22 minutes until golden brown.
  11. Let it stand for 5 to 10 minutes before serving.
