Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 to 3 celery sticks, chopped
  • 2 to 3 garlic cloves, minced
  • 1/2 tablespoon chopped fresh rosemary
  • 1/2 tablespoon chopped fresh thyme
  • 1 pound chicken breast
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 pounds potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup low-fat cheddar cheese
  • A handful of roughly chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add chopped onion, carrots, celery, and minced garlic; sauté for 5 minutes until softened.
  2. Stir in rosemary and thyme. Add chicken breast and cook for 5 minutes until slightly browned.
  3. Sprinkle flour over the mixture while stirring to avoid lumps. Gradually pour in milk and cook until slightly thickened.
  4. Add cubed potatoes and chicken broth; bring to a boil, then reduce to a simmer. Cover and cook for about 25 minutes until potatoes are tender.
  5. Stir in cheddar cheese until melted, then season with salt and pepper to taste. Garnish with fresh parsley before serving.
