  • 2 Vegan gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey Cocoa Spread

Instructions

  1. Prepare the coconut mousse by whipping heavy cream and mascarpone until soft peaks form. Fold in dissolved vegan gelatin mixed with warm coconut milk.
  2. Pour mousse into hemisphere molds, adding gooey cocoa spread halfway through filling them. Freeze for at least 6 hours.
  3. For the cocoa Breton shortbread, mix ingredients to form a dough, chill, roll out, cut shapes, and bake until lightly golden.
  4. Once cooled, carefully remove domes from molds. Assemble each dome on its shortbread base and let thaw at room temperature before serving.
