  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the cinnamon sugar filling by mixing brown sugar, softened butter, and cinnamon until smooth.
  3. In a large bowl, mix together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream cold butter and granulated sugar until fluffy; add eggs and vanilla extract.
  5. Gradually combine wet and dry ingredients until fully incorporated.
  6. Roll out the dough into a rectangle, spread the filling evenly on top, then roll tightly.
  7. Cut into 10–12 equal pieces and place on a parchment-lined baking sheet.
  8. Bake for 9–11 minutes until edges are golden; cool on wire racks.
  9. Prepare frosting by mixing cream cheese and butter until smooth; add powdered sugar and vanilla.
  10. Frost cooled cookies before serving.
