  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato slices in olive oil, salt, and optional spices. Spread evenly on a baking sheet and roast for 25-30 minutes.
  2. While roasting, rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Cook on a grill pan over medium-high heat until golden brown (about 6-7 minutes per side) until internal temperature reaches 165°F (74°C). Let rest before slicing.
  3. Steam broccoli in a pot fitted with a steamer basket for about 5-6 minutes until tender.
  4. Assemble by layering steamed broccoli, roasted sweet potatoes, and sliced chicken in meal prep containers.
