  • 2 cups fresh spinach
  • 8 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Cut each chicken breast in half horizontally and pound to an even thickness.
  3. Marinate the chicken with olive oil, minced garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in a skillet until wilted; remove from heat.
  5. In a bowl, mix softened cream cheese with sautéed spinach and half of the mozzarella.
  6. Arrange marinated chicken in the baking dish, spread the cream cheese mixture over it, and top with remaining mozzarella.
  7. Bake for 20-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly.
