Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying

Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook the ground beef until browned, draining excess fat.
  2. Add chopped onion; cook for about 3 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for about 3–4 minutes.
  4. Assemble quesadillas by placing cheese on one half of each tortilla, topping with beef mixture and more cheese before folding.
  5. In a clean skillet over medium heat, lightly butter or oil the pan and cook each quesadilla for about 2–3 minutes per side until golden brown and crispy.
  6. Slice into wedges and serve with sour cream, guacamole, or salsa.
