Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each zucchini in half lengthwise to create 'steaks'. Score the flesh side in a crosshatch pattern and sprinkle with salt; let sit for 15 minutes.
  3. In a skillet over medium heat, combine minced garlic, crushed red pepper flakes, and 2 tablespoons of olive oil. Cook until fragrant, about 1-2 minutes. Transfer to a bowl.
  4. Heat remaining olive oil in the skillet, pat dry the zucchini halves, and cook flesh-side down until golden brown (2-3 minutes). Place them on a baking sheet.
