  • 1.5 pounds lean ground beef
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 ½ cups biscuit mix
  • 1 cup water
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles
  • 1 ½ cups shredded cheddar cheese (divided)
  • ½ cup mild salsa

Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium-high heat, brown the ground beef until no longer pink; drain excess fat.
  3. Add chopped onions and red bell peppers to the skillet; cook until softened.
  4. In one bowl, mix biscuit mix with water until combined. Press into a greased 9×13” casserole dish and bake for 5-8 minutes.
  5. Spread the cooked beef mixture over the biscuit layer.
  6. In another bowl, combine sour cream, mayonnaise, drained green chiles, garlic powder, and ¾ cup cheese; spread over beef.
  7. Top with salsa and remaining cheese.
  8. Bake uncovered for about 30 minutes or until hot and bubbly.
