Ingredients

Scale
  • 1 heaping tablespoon sugar-free peanut butter
  • 1 large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monkfruit sweetener (optional)
  • Pinch of salt
  • 1 ½ tablespoons sugar-free semi-sweet chocolate chips (divided)
  • Water (1-2 teaspoons as needed)

Instructions

  1. Mix together peanut butter, egg, cocoa powder, salt, monkfruit sweetener, and one tablespoon of chocolate chips in a mixing bowl until smooth. If too thick, add water gradually to achieve desired consistency.
  2. Preheat your mini waffle maker according to manufacturer’s instructions.
  3. Pour half the batter into the preheated waffle iron and sprinkle with half of the remaining chocolate chips. Cook for 2-3 minutes until steam no longer escapes.
  4. Carefully remove the waffle and repeat with the rest of the batter to create another waffle.
