  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil (plus more for greasing)
  • 1/2 cup warm water (110 degrees)
  • 4 oz button mushrooms
  • 2 Tbsp butter (or plant-based alternative)
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic (sliced thin)
  • 2 Tbsp cooking apple juice
  • 1 tsp fresh thyme leaves
  • Salt and pepper (to taste)
  • 1 cup jarred pesto sauce
  • Cup Green Pesto Gouda cheese
  • Mixed fresh herbs
  • 1 cup balsamic vinegar
  • 2 Tbsp honey

Instructions

  1. Prepare the dough by mixing bread flour, garlic powder, salt, active dry yeast, olive oil, and warm water until combined. Knead for about 5-7 minutes until smooth. Let rise in a greased bowl for about an hour.
  2. For the mushroom skulls, sauté shallots in melted butter until translucent; add garlic and mushrooms with cooking apple juice, thyme, salt, and pepper until tender.
  3. Roll out risen dough into flat circles. Spread pesto on each circle and top with the mushroom mixture and cheese before baking at 375°F for 15-20 minutes until golden brown.
  4. To make balsamic glaze, simmer balsamic vinegar with honey until thickened.
  5. Drizzle the glaze over warm flatbreads before serving.
