  • 2 tablespoons light soy sauce
  • 1 tablespoon apple vinegar
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 teaspoons coarsely ground black pepper
  • Mixed bell peppers and onion, chopped
  • Minced ginger
  • Minced garlic

Instructions

  1. Marinate the sliced chicken with light soy sauce, apple vinegar, and cornstarch for 10–15 minutes.
  2. In a small bowl, mix together the remaining soy sauce, apple vinegar, chicken broth, sugar, black pepper, and cornstarch to make the sauce.
  3. Heat oil in a large skillet over medium-high heat. Sear the marinated chicken until lightly browned on both sides; set aside.
  4. In the same skillet, stir-fry minced ginger and garlic until fragrant. Add chopped onions and bell peppers; cook briefly.
  5. Pour in the prepared sauce and stir until it thickens slightly. Return the chicken to the skillet and coat with the sauce.
  6. Serve immediately over rice or as desired.
