  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce

Instructions

  1. Slice the beef against the grain into thin strips. Rinse the bok choy leaves thoroughly. Mince the garlic and grate the ginger.
  2. Heat a wok or large skillet over medium-high heat. Add vegetable oil and swirl to coat.
  3. Add the sliced beef in a single layer; sear without stirring for about 2 minutes until browned, then stir-fry for an additional 2-3 minutes until cooked through. Remove and set aside.
  4. In the same wok, add more oil if needed. Sauté garlic and ginger until fragrant, then add bok choy leaves and stir-fry for about 3-4 minutes until wilted but bright green.
  5. Return the beef to the wok, pour in soy sauce, and toss to combine all ingredients. Heat through for another minute.
  6. Serve immediately over steamed rice or noodles.
