  • 1 pound zucchini (cut into 1/2-inch sticks)
  • 1/3 cup flour
  • 1 large egg
  • 3/4 cup bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon Italian seasoning
  • ground black pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C) and coat a baking sheet with oil or cooking spray.
  2. Set up three shallow dishes: one with flour mixed with garlic powder and salt; one with the beaten egg; and the third with breadcrumbs mixed with Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip each zucchini stick first in the flour mixture, then in the egg wash, followed by coating it in the breadcrumb mixture until well covered.
  4. Place the coated zucchini on the baking sheet and bake for about 20 minutes, turning halfway through until golden brown and crispy.
