Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic
  • 1 lemon
  • Dried thyme
  • Dried oregano
  • Honey
  • Fresh basil

Instructions

  1. Preheat oven to 200C | 390F.
  2. Wash and cube the potatoes; par-boil for 6–8 minutes, then drain.
  3. Toss potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Roast for 30–40 minutes until golden brown.
  5. Add feta cheese and half a squeezed lemon; return to oven for another 15 minutes.
  6. Squeeze out roasted garlic cloves and mash; mix with remaining lemon juice and fresh basil.
  7. Combine with the potatoes, drizzle honey on top, and serve.
