  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (like Pink Lady or Honeycrisp)

Instructions

  1. Preheat the oven to 350°F. Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper.
  2. In a small bowl, mix brown sugar and cinnamon; set aside.
  3. In a large bowl, whisk eggs and granulated sugar until combined. Stir in melted butter and vanilla until smooth.
  4. Add flour, baking powder, baking soda, and salt to the wet ingredients; mix until just combined.
  5. Gently fold in chopped apples.
  6. Pour half of the batter into the pan, sprinkle three-quarters of the cinnamon mixture on top, then layer with remaining batter and sprinkle leftover cinnamon sugar.
  7. Bake for 35 to 45 minutes or until golden brown and a toothpick comes out clean.
